Chocolate Chip P.B. Bars




These are thick and chewy bar cookies...a subtle hint of peanut butter flavor when you bite into them, and loaded with chocolate chips! I used dark-chocolate chips because that's what I had on hand, but you could use any type you wanted.

Here's the recipe:
Chocolate Chip P.B. Bars

1 3/4 cups flour
1/2 tsp baking soda
1 1/4 cups sugar
3/4 cup peanut butter (creamy or chunky, up to you)
1/2 cup butter, softened
1 tsp vanilla
1 egg
1 pkg. chocolate chips, divided

Combine flour and baking soda in a small bowl. Beat sugar, peanut butter, butter and vanilla in a mixing bowl until creamy. Beat in egg. Gradually stir in flour mix. Stir in 1 1/4 cups of the chips. Press into a foil-lined 13x9 inch baking pan. (I spray mine with baker's spray, too-the foil, that is). Sprinkle with remaining chips and press them down.

Bake in preheated oven at 350 for 20 to 25 minutes or until center is set. Cool in pan on a wire rack. Once completely cooled, lift foil liner out of pan and cut into bars. Makes about 3 dozen, depending on how big you cut them! ;) Enjoy!
